Spinach & Artichoke Dip

Makes 4 cups


1 14-ounce package frozen artichokes, thawed
1 10-ounce package frozen, chopped spinach, thawed
1/4 cup onion, finely minced
1 cup plain yogurt
1 cup mayonnaise
1 cup grated Parmesan cheese, plus more for topping
1 cup shredded Monteray Jack cheese, plus more for topping
pita chips, for serving


Preheat oven to 375 degrees.

Roughly chop artichokes. Drain spinach and squeeze dry.

Mix together all ingredients and spread in a casserole dish. Top with a sprinkle of cheese. Bake for 45 minutes until bubbly and top is brown.

Serve with toasted pita chips.
