Serves 2
1 lemon, zested and juiced
2 tablespoons sour cream
3 tablespoons olive oil
1 teaspoon dried dill
1 head romaine lettuce, chopped
1 avocado, sliced
2 small tomatoes, sliced
4 ounces smoked salmon, thinly sliced
Make dressing: combine lemon juice, lemon zest, sour cream, and dill. Whisk in olive oil until smooth.
To assemble salad, mix lettuce with dressing and split onto 2 plates. Top each with half of sliced avocado, tomato, and smoked salmon.
