Roasted Potatoes

Roasted potatoes never go out of style. For an update on an old classic, get a variety of potatoes like red potatoes, yukon golds, and Peruvian purple potatoes.

Serves 6-8


2 pounds assorted potatoes, cut into equal sized wedges
1 Tablespoon olive oil
1 teaspoon Kosher salt
1 teaspoon cracked pepper


Preheat oven to 350 degrees. Toss potatoes with olive oil, salt, and pepper. Roast for 1 hour, turning once or twice.
