1/4 cup low fat sour cream
1/4 cup low fat mayonnaise
1/4 cup skim milk
2 tablespoons chopped parsley
2 tablespoons grated onion
1 tablespoon lemon juice
2 oz Danish blue cheese
2 4oz boneless, skinless chicken breasts
2 teaspoons Montreal steak seasoning
1 head Boston bibb lettuce
2 small tomatoes
3 slices cooked bacon, crumbled
Make dressing: combine sour cream, mayonnaise, milk, parsley, onion and lemon juice. Crumble blue cheese, and stir into dressing. Season with salt and pepper. Refrigerate.
Season chicken breasts with steak seasoning. Heat grill to medium high. Grill chicken breasts for approximately 5 minutes per side. When cooked through, seal in aluminum foil until the rest of your salad is assembled.
Split bibb lettuce between two plates. Top with tomatoes, sliced grilled chicken, salad dressing and crumbled bacon.
