I love giving Nicholas new and varied flavors to try, but he certainly has his favorite staple foods–like french fries. So I make them a little healthier by using sweet potatoes and baking them, and add in an interesting new flavor for him (and us) with the curry powder. Served on the side of Sloppy Joe’s and you’ve got an interesting twist on an old classic.
1 1/2 pounds sweet potatoes, peeled and cut into 1/4 inch french fries
2 Tablespoons olive oil
1 Tablespoon curry powder
1 teaspoon salt
Heat oven to 400 degrees. Toss sweet potatoes with olive oil, curry powder and salt. Arrange on a baking sheet in a single layer and bake for 40 minutes or until crispy.
