Makes approximately 40 1-ounce servings
1/2 cup bulgur
2 cups water
1 pound fresh lima beans
2 ears corn, kernels removed from cob
1 tomato, roughly chopped
1 red pepper, roughly chopped
Boil bulgur in water for 20 minutes. Add lima beans and corn, cook covered another 20 minutes. Add tomato and red pepper and cook, covered another 10 minutes. If mixture is too watery, cook uncovered another 10 minutes. Puree in food processor.
