Shepherd’s Pie

Makes approximately 30 1-ounce servings

Reserved meat mixture from Summer Shepherd’s Pie

2 medium sweet potatoes, steamed or baked, skins removed

1/2 cup chicken stock

Combine meat mixture reserved from mom and dad’s shepherd’s pie and chicken stock. Cook, covered, over low heat until all vegetables are thoroughly cook through and very soft. Place mixture in food processor, add sweet potatoes, and puree until smooth, adding additional chicken stock if necessary.
