Roasting fruit is such a great way to concentrate flavor, so it’s a perfect method for preparing when you’re going to mix with something bland like oatmeal.
Makes 24 1-ounce servings
3 large Gala apples, cored and cut into large wedges
1 big bunch red seedless grapes
1 cup rolled oats
2 cups water
Instructions
Heat oven to 400 degrees. Put apples and grapes on a baking dish and roast for 45 minutes, until apples are tender and grapes have begun to shrink and concentrate.
Meanwhile, make oatmeal. Bring water to a boil in saucepan. Stir in oats. Turn heat down to medium low and simmer for 10 minutes.
When fruit is done, run through a food mill to remove all of the skin.
Pour oatmeal and pureed fruit into the food processor or blender and puree.
