Apples and Wheatberries

Makes approximately 30 1-ounce servings

6-8 medium sweet apples

1 cup wheatberries

 

Bring wheatberries and 2 1/2 cups water to a boil. Turn down to simmer, and cook covered for 90 minutes. Reserve wheatberries and cooking liquid.

Meanwhile, steam apples whole for 10 minutes. Grind whole apples in a food mill until only seeds, stem and skin remains in mill. Combine ground apples, wheatberries, and cooking liquid in food processor, and pulse until desired consistency.
