Since you like bechamel, you might like my ridiculously decadant use of this sauce: take a pasta that can scoop up a lot of sauce--medium shells, conghiale, something like that. Cook, then toss with 2 cups of bolognese, divide into individual crocks or ramekins. Then pour 1/4 cup or so of cream into each crock, top with really pungent fontina cheese. Bake in a hot oven until browning. It&#039;s so bad...and soooooo good.]]></description>

		<description><![CDATA[I make this receipe once a quarter with red wine.  I actually make four batches and freeze a bunch, that way we have easy dinner on hand whenever.
Also, we like to top this with a bechamel (sp?) sauce.  Pretty easy since I always have flour, milk, and butter hanging around.
It really is hands down the best ragu I have ever had in the continental U.S.]]></description>

Personally I prefer the rice on the top so I can dip the rice in the gumbo rather than it all being absorbed into the rice when it&#039;s on the bottom. But Dan just stirs it all up anyway, so I think it&#039;s just a personal preference! It&#039;s great either way.]]></description>
